VINIFICATION
Crushing/de-stemming, 18-21 day maceration, with recurrent and regular pumping over into the lap; délestage is also used. Refinement takes place in French barriques and oak tonneuax after alcoholic and malolactic fermentation. Bottled after 10-12 months it refines for about one year.
GASTRONOMY
Game and red meat; it also goes well with matured intense hard cheese.
